After years serving New York City genuine shoyu ramen, Chef Nakamura has opened Niche to introduce New York to his mazemen. A close cousin of ramen, mazemen lacks the broth but piles on toppings like ribeye steak, Maine uni, house-smoked salmon and house-double-smoked bacon.
